For this month challenge, I made an Almond Cheesecake with Lemon. The cheesecake itself is actually a Swedish Cheesecake that have a really different consistency and texture compared to the regular cheesecake. To see the full post and recipe, please visit my blog here.
The almond and the lemon really works well and I still can taste a hint of cheese somewhere there. The texture is not as soft as the regular cheesecake since it used crushed almond and not the essence. The berries add a nice sweetness but I like it better without.
